Why do we lose muscle mass when dieting?

I heard that the body tends to lose muscle mass when we eat less calories. But is it also true if we eat a high protein diet? can we still lose muscle? What about in the case of a high carbohydrate diet? Can we still lose muscle mass? Why does our body use muscle anyway? Is it due to calories or lack of amino acids in the diet?

This is why these fad diets these days, that restrict calories are bad.
