The Most Scrumptious Salad in the Universe

Let me start off by saying that I love a good salad. Pretty much just chop up any vegetables, throw them in a bowl, and I’m a happy camper. But I just made the most delicious salad, so I thought I’d share it with everyone. The old expression “you are what you eat” really is true. So to begin with, I like to try to buy organic products. Not only is organic produce free of the pestisides and toxic chemicals of traditionally grown produce, but did you know that they are actually more nutritious? It’s true. It is a sad fact that the fruits and vegetables we eat today are far less nutritious than the fruits and vegetables that your grandparents ate as kids. This is due to a combination of factors, but pretty much boils down to the fact that we’ve planted mono crops (just one crop) and depleted the once rich soil. Throw on some chemicals and pesticides, mix with genetically modified seeds, and presto- you’ve created less nutritious produce.

So back to the most delicious salad- as I said, I like to start with organic produce. Here are the ingredients you’ll need for the salad:

– radicchio
– endive
– green onions (scallions)

That’s it for the salad ingredients- simple and delicious! Just cut up all those ingredients and throw them in a bowl. I went super simple on this one because I tend to make salads with over 10 different vegetables, and it can take a while to rinse and chop all those. For this I was going for simplicity and speed.

Now for the delicious dressing. Here are the indgredients you’ll need:

– garlic (one clove)
– apple cider vinegar
– truffle oil
– stone ground mustard
– salt
– pepper

Finely chop the clove of garlic. I like to let it sit for ten minutes because it helps release an element of the garlic that is particularly healthy (the cancer fighting properties). Of course the amount of salad dressing you make will depend on how much salad you need. I just make mine to taste, and I usually go a little light on the oil to keep the calories down.

Presto! Now you have the most delicious salad in the world! Seriously…
