Let me start off by saying that I love a good salad. Pretty much just chop up any vegetables, throw them in a bowl, and I’m a happy camper. But I just made the most delicious salad, so I thought I’d share it with everyone. The old expression “you are what you eat” really is true. So to begin with, I like to try to buy organic products. Not only is organic produce free of the pestisides and toxic chemicals of traditionally grown produce, but did you know that they are actually more nutritious? It’s true. It is a sad fact that the fruits and vegetables we eat today are far less nutritious than the fruits and vegetables that your grandparents ate as kids. This is due to a combination of factors, but pretty much boils down to the fact that we’ve planted mono crops (just one crop) and depleted the once rich soil. Throw on some chemicals and pesticides, mix with genetically modified seeds, and presto- you’ve created less nutritious produce.
