Crispy And Healthy Vegan French Toast

Because it’s so easy to make, this vegan french toast recipe will simply become one of your much loved healthy vegan recipes for breakfast.

Thunderstorms, with heavy winds and rain, rolled in off the ocean all night, and through the morning here in Albania. We both love watching storms, and felt like a nice warm breakfast to enjoy while watching the show.

We had found a few really nice ripe bananas at the market and some very cheap bread in the store downstairs for 50 cents! So, I wanted to prepare some delectable vegan french toast.

My usual recipe involves a few more ingredients (you can actually get it as a free download on my healthy vegan breakfast recipes page), but this method turned out to be delicious as well.

Prep time: 5 min. Cooking time: 10 min. Time from start to eating: 15 min. Makes 5 large, or 6 regular size, slices.

Vegan French Toast Recipe Ingredients:

2 very ripe bananas

1/2 to 1 cup water, for consistency

1 tsp Breakfast Spice Mix (cinnamon, nutmeg, allspice)

5 slices whole grain bread

1 Tbsp olive oil

1 apple, diced

1 orange, chopped

Vegan French Toast Recipe Directions:

1. Mash the bananas with adequate water to make a gooey but thick consistency. Blend and stir in the spice mixes. Heat a skillet to medium-high, and pour in about a teaspoon or less of olive oil.

2. Dip a piece of bread, coating both sides, in the batter quickly, and then lay it in the pan. Make sure to get a bit of the olive oil underneath the bread slice. Repeat procedure for as many bread slices as will fit in your skillet.

3. Let the toast cook until they are lightly browned before flipping it on the other side, to cook until lightly browned as well.

4. Serve topped with your favorite fresh fruit, some lightly cooked berries, or some real maple syrup.
